Conscious carnivores, ethical butchers are changing food culture (The Oregonian)

A new wave of \"ethical\" meat eaters is literally taking matters into their own hands, learning butchery and curing skills to carve up the whole animals they purchase, or at least watching with eyes wide open before they dig into meat. Portland is in on the trend, and in some ways is leading the way.
